So as my days of a housewife, I have been cooking most of our meals. Luckily my husband is easy to satisfy with waffles. Waffles are one of his favorites, topped with lots of butter, crunchy peanut butter, and lots of syrup. Box mixes run around $3 or $4 and making it from scratch is so cheap. I found a recipe that I use all the time now and don't think I will ever make it out of a box again! So here is my recipe:
Pancake and Waffle Mix
In one bowl, sift together the following:
1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
In a second bowl, whisk together the following:
1 1/4 cups milk
1 egg
3 tablespoons oil for pancakes or 4 tablespoons oil for waffles
Whisk the dry ingredients in with the wet ingredients, but be sure not to over mix or the finished product will be tough.
This recipe makes about 5 waffles on my waffle iron and I have not made pancakes because my husband will not eat pancakes. I try to tell him the only difference is presentation of the final product, but he won't budge. Enjoy and let me know how the recipe works for you.

Christmas in North Dakota
We have been getting ready for Christmas around here. I have our tree up and all of the Christmas decorations, including Christmas collars on our dogs. This will be our first Christmas without our families. We went home the week of Thanksgiving to see everyone and planned to stay in North Dakota for Christmas, just the two of us. As the work schedule has been made it looks like John will only be home a couple of days every week this month. Even more unfortunately, he has been scheduled to work on Christmas . . . so we will see each other the week before and hopefully soon after, but the days around Christmas will be spent apart. I will be here at the house alone and John will be at work some number of hours away.
1st Home Purchased in 2008
I have some posts that I need to get up going back to the first year of marriage for us. We signed papers on our first home the month before we got married.
We had looked at a few homes, but everything that we found had things that we didn't like and we found ourselves talking about major renovations. The other thing that we kept running into was foundation issues, which is common in older, pier and beam homes. This was one of the busiest times for us because we were both in our last semester of college, our wedding was coming and we still had things to get done, and I was in the middle of tax season! So we figured we would just figure things out in the summer after graduation and our wedding.
I got a call from one of our friends that worked for a realtor in town and she said that there was a house being put on the market that day that was just around the corner from her house and from where John was currently living, so I grabbed my purse and ran over there to meet the realtor as she was putting the sign in the yard.
The house was everything we were looking for, three bedrooms, laundry room was not in the kitchen, big back yard with side yard, alley acess, storage for John's tools, in need of repairs that we could handle, ideal location, and the price was affordable. When I talked to John his main question was if it was on a slab or pier and beam.
It all happened quick, one day we didn't know if we were staying in San Angelo and the next we were under contract. Here are some photos of the house when we bought it.
Okay I worked on getting the photos loaded for this post for a long time. I am wanting to get the remodeling photos loaded, so that I have a post for each of the stages of our remodeling projects. It will take me a while to get it all done, but hopefully it will happen at some point . . . plus the pictures that I need are on John's laptop and it is with him.

Greetings
Greetings again from a land far far away from all of you. We are doing great this week. We have had a great week and I have been enjoying our time together. John has been in and out all week working, but he comes home which is a wonderful blessing to me. Things are great just having each other and spending every moment together - life is great and I am so blessed. John and I are so lucky to have each other.
He got a new gun in the mail yesterday and is so excited to go shoot it. As it turns out, he probably won't be able to shoot it until Sunday when he has a day off. I plan on loading the truck up and having everything ready to go when he gets off work, so that we can make a quick trip out to the badlands to shoot a round and maybe have a picnic. Hopefully he won't argue with me and will just get in the truck. Of course this depends on what his yard time is in the morning. We will see if my plan works!

Great Weekend
Well John got home Friday morning!!! He slept most of the day because he had been up all night working, but I was just happy to have him home. John has been on a cinnamon roll kick so I took the time while he was sleeping to go make cinnamon rolls from scratch. I was concerned that they would flop because they had yeast in them, but they turned out great!
We ended up grilling and hanging out with the neighbors for the night. We made stuffed jalapenos, burgers stuffed with cheese, and sweet potato fries. Everything turned out yummy!
We slept late Saturday and spent the rest of the day lounging around the house watching movies. Sunday we had a late breakfast at Perkins and John took me to a movie. We saw The Time Travelers Wife. John slept through some of it but it was nice to get out of the house. Then for dinner I made chicken fried steak with mashed potatoes. The chicken fried steak turned out great and the recipe was courtesy of the Neely's (Food Network) and the cream gravy turned out after two attempts, but I did it!

10 Days Apart
Things are okay here in North Dakota. John has been gone for 10 days and will hopefully be home in the morning. Things have been lonely with him gone for so long, but I am so excited and ready for him to be home. Not much has been going on since he left an there is not much to do so this post is definitely uneventful.

New Adventures
Well I have been playing around with the idea of trying to catch this up by doing monthly posts for the past eight months that I have missed, but it just causes most delay on my part so what better way then to just start again. I hope to get some postings done of the past eight months because so much has happened. John and I started remodeling our house in January and I finally finished it in August. John got transferred in May and we lived apart until August. John came back for me in August and we made the move north.
We are now living in North Dakota where the world is different from Texas. We are trying to make the adjustment, but we miss Texas. John is working and I am staying home for now trying to get us settled.
